H alf a dozen cave hotels are now burrowed into the soft rock of Ürgüps Esbelli Hill. Physically they are all pretty much alike ' full of lovely textures, playful inner spaces, carved ornaments and niches and secret passages that have origins lost in remote antiquity. Ürgüp House is as captivating as the next. What sets it apart is the owner.

Ms Sevim Karabiyik was for years a partner and research director for this book and site. That means, more than almost anyone else in Turkey she had the chance to reflect on what makes a good hotel. Nor that she really needed it, because more than enyone else in our experience she had the instincts that make a good hotelkeeper ' ie. empathy and generosity of spirit. Add her organising skills as a travel agent and guide, and you have the makings of one of the best hotelkeepers in the land.

Urgup House ise a great little hotel in a wonderful position with stylish, homey rooms. The suppers were tasty Turkish and the breakfasts above the norm. We have spread the word and about eight of our friends have since been and all reported favourably.
